Swedish Sandwich Cake (Smörgåstårta)

Pro tip:

Use a mandolin for thin cucumber slices that make for a beautiful presentation!

It’s only fitting that the first recipe I post to this website is a cake in sandwich form. It’s been so fun making recipes that I’ve only heard of from my Swedish family but have never made on my own. How has it taken me this long to try this? A friend of mine suggested a cake with ham, cheddar, apples, and arugula. Excuse me? Yes.

These cakes are usually made for a celebration, so I made it to celebrate the end of the longest month of our lives. Goodbye January!

To assemble:

  • Simply cut the crusts off of your bread of choice - I used Foor For Life Ezekiel bread per uge (4 grams of protein per slice and sprouted wheat? Sign me up)

  • Make layers of cream cheese with your choice of inside toppings - could do smoked salmon, tuna, or deli meat. Add toppings like pickles, cucumber, tomato, and fresh herbs/spices

  • Add a little liquid to the cream cheese to make it spreadable (slightly warming in the microwave for 15 seconds is helpful too) and “frost” the outside of the cake

  • Then, decorate however your creative heart desires! There are truly no rules here - radishes make fun flower petals, chives make great stems, microgreens for grass, and long fresh herbs (dill) as trees
